Cooking ~ Irish Soda Bread

I have been asked for this recipe, and decided it was better to put it here, rather then any where else:)

These were the only pictures I got. Sorry, I didn't take any pictures of the process, or the final result.

So, Irish Soda Bread.

Dry ingredients
3 cups all-purpose flour
2/3 cup sugar
1 Tablespoon baking powder
1 1/2 teaspoon salt
1 teaspoon baking soda

Wet ingredients
1 3/4 cups buttermilk
2 eggs
4 Tablespoons butter, melted and cooled just a bit

Other ingredients
2 additional Tablespoons melted butter
1 cup raisins (optional)

  1. Preheat oven to 350 degrees.
  2. Combine the dry ingredients into a large bowl.
  3. In a separate bowl, combine the wet ingredients and stir well.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Add raisins and stir to combine.
  6. Pour batter into a greased or sprayed 9 inch circular cake pan.
  7. Pour/brush the additional butter over the top.
  8. Bake for about an hour, or until the top is golden and firm to the touch.
  9. Cool for ten minutes.
  10. Slice.
  11. ENJOY!!!!
It was really good. It wasn't that sweet, so the raisins made it a bit sweeter, but it still wasn't that sweet even with the raisins. This would make a good dessert, or even a snack. You could eat if with a meal depending on what it is. This is not a bread to eat with spaghetti sauce!!! Bleak!

Credit for this recipe goes to Mrs. Wright who blogs over at thewrightstuffforus.blogspot.com/

Hope you enjoy!!!
Love,
Rebekah
